Chocolate biscuit pudding

The good old marie biscuit layered with the ever decadent chocolate whipped cream, caramel and chocolate chips.

Ingredients
  

For layering

  • 250 grams Marie biscuits, or nearly 50 biscuits
  • 2 tbsp instant coffee
  • 1 cup hot water
  • ½ cup caramel, optional
  • ½ cup chocolate chips, optional

For the chocolate whipped cream

  • 2 cups heavy cream
  • ¼ cup unsweetened cocoa powder
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

Instructions
 

  • In a large chilled bowl, add all the ingredients for the chocolate whipped cream and beat on medium speed until soft peaks are formed.

  • In another bowl, add instant coffee and 1 cup hot water to it. Mix well.

  • Briefly dip each marie biscuit in the coffee mixture.

  • Arrange these coffee soaked biscuits in a dish to make the first layer.

  • Spread the chocolate whipped cream on the biscuits as a thick second layer.

  • Spread some caramel and chocolate chips on the whipped cream. This is optional.

  • Repeat the layering process starting with the biscuits.

  • The final layer should be of whipped cream. Sprinkle some cocoa powder or even nuts on the top (optional). Refrigerate atleast for 4 hours or better overnight.

  • Serve chilled topped with some chocolate syrup.

Notes

  • While making the whipped cream, make sure that the beaters and the bowl is chilled.
  • It is not necessary to beat the cream until stiff peaks. 
  • If you are using whipping cream in place of heavy cream, then alter the sugar according to taste as whipping cream contains some sugar  in it.
  • Do not soak the marie biscuits in the coffee mixture. a brief dip will do.
  • You can spread the whipped cream as a thick or a thin layer on the biscuits.
  • Using caramel and chocolate chips is completely optional. You can use anything of your choice or even use chopped nuts.
  • The final layer should always be the whipped cream.
  • You can top the pudding with cocoa powder (as I did) or even chocolate chips or nuts.
  • Refrigerate the pudding atleast for four hours before serving.
  • You can serve with some melted chocolate too.
