Fudgy Chocolate Brownie Cookies

Rich, chewy and decadent chocolate brownie cookies with fudgy centers and crispy, crackled outer layer.

- ½ cup unsalted butter, diced
- 200 grams compound dark chocolate, chopped
- 2 large eggs
- ⅔ cup granulated white sugar
- ½ cup brown sugar, lightly packed
- 1 cup all purpose flour
- 3 tbsp unsweetened cocoa powder
- ¼ tsp salt
- 1 tsp baking powder
Add butter and chopped dark chocolate on a pan and melt on low heat stirring constantly.
In a mixing bowl or a stand mixer, add the eggs, white sugar and brown sugar.
Beat on medium heat for 5 minutes.
Reduce the speed and pour the melted chocolate gradually and mix to combine.
Sift together all the dry ingredients - all purpose flour, unsweetened cocoa powder, salt and baking powder.
Add the dry ingredients to the chocolate mixture and mix until just combined.
Pre-heat the oven for 180°C and line baking trays with parchment paper. Use an ice cream scoop to drop the dough balls onto the prepared trays.
Bake for 12-15 minutes in the pre-heated oven. Let it cool off in the tray before moving them onto the rack. Cool completely and serve the cookies.
- While melting the butter and the dark chocolate, make sure you stir constantly to avoid chocolate from burning.
- Melt the chocolate in the lowest heat possible.
- While dropping the dough balls onto the prepared trays, make sure you space them out evenly as the expand while baking.
- Depending on the thickness of the cookie you want, flatten the dough accordingly.
- The cookies will be dome shaped when it is out of the oven. It will eventually flatten when cooled.
- Before transferring to a wire rack for cooling, let it cool in the tray for 10 minutes. The cookies will be very soft and transferring them immediately out of the tray will only break them.
- You can sprinkle the dough balls with some sea salt or even chocolate chips.
- Bake the cookies for 10-12 minutes, depending on the size of the dough ball. Extend to 15 minutes, if it is still uncooked.
- These cookies stay good for a few days when kept in an air-tight container.
